Damn this frosting is good! and its healthy whats not to like? i really don't want to wax lyrical about why you should make this... just do it and i promise you , you will never want to smear butter and icing sugar over your cake again!
What you will need
- 1 bar of Raw Chocolate Pie with Pink Himalayan Salt - or use your own favourite
- 5 medjool dates
- 1 cup (5 1/2 oz) Cashew nuts
Throw all your ingredients into a bowl or food processor and whizz it up... the consistency should be like firm icing. If you are using a hand held whizzer like me you will need to blitz it for a while to get a nice smooth frosting. If the mixture is too stiff add a little splash of water.
That is all there is to it! a super delicious, rich and what do you know... HEALTHY frosting.
Now all you need to do is head over to sweet treats and make my Black bean Muffins, because the combination of this frosting and those Muffins, well it's to die for!! Chia and Raspberry Jam works really well also. My daughter has just put a dollop of it on her ice cream...now that makes me happy!
Store in the fridge in a air tight container for up to a week...
